Raw Avocado Cream Tart

For the Cream:
🔹400g Avocado (approximately 4-5 avocados).
🔹260ml Lemon or Lime juice.
🔹200g Coconut butter.
🔹100mg Agave syrup or 2 tablespoons of honey.
🔹2 tablespoons Coconut powder.
🔹1 Passionfruit (optional).
Instructions: Place all ingredients into a blender. Blitz until smooth, then set aside in the fridge. This is a delicious avocado cream tart, easy to make.
For the Base:
🔹3 tablespoons Date paste or 8 whole dates (pitted and blended).
🔹40g Walnuts and 40g Pecans (or 80g of either).
🔹80g Coconut powder.
🔹1 pinch Sea salt.
🔹1 teaspoon Coconut oil.
🔹4 tablespoons Hot water.
Instructions:
Add all base ingredients to a blender or food processor and mix.
Ensure the dough is moist enough to spread across the bottom of a tart tin. Add more hot water if required.
Prepare your tin with baking paper and press the dough down firmly.
Spread the avocado cream evenly over the base.
Place in the freezer for at least 30 minutes to set.
Decorate: Once cooled, you can top it with fresh passionfruit for a flavour that complements the cream beautifully.
